Any speaker that you spend a decent amount of money on will sound good. If you want some quality sound, get a component set, and definately amplify any of the speakers if you want them to get loud, the stock HU won't put out enough power to "pound" the midbass with 6x8's.
If you want low end/bass, get a subwoofer setup.
As for the speaker brands, figure out your price range, find a decent website mentioned on here, and see what your options are and pick.

When looking for a speaker if you want those crisp highs look at the sensitivity rating. The higher they are the btter sound you will get. Keep in mind a cheap speaker may have they cheap sound. Granted I had those pioneers and switched to my polks and what a difference. It's all on your taste of sound.

Mids and tweeters need amped too if you get any more expensive quality set. Actually almost any speaker you replace your stock ones with would sound alot better on an amplifier.
I actually just got in my set of MBQuart Reference 6.5" components today and am going to be running them off of an amp at 100w RMS each.
To get loud crisp sound, you need an amplifier.
With the other Pioneer speakers and such mentioned on this post you could get away with just running them off of the head unit in your case as a beginner in audio.

I've got stock speakers in my 2002 Ranger XLT. I know nothing about how everything works. Just the basics. I like the good thump sound but would still enjoy hearing when I'm 60 years old if you know what i mean. Can I replace the stock ones with other 6x8 speakers and just plug them into the same wires and have sound? Or is there more to it?

Better speakers making a 'thump' doesn't mean that it's loud and going to 'damage' your hearing, haha. A good set of speakers just reproduces the sound much better, even at low volumes, adding all of the frequencies to the music that normal stock speakers cannot produce.
