I've got a Kicker Solo baric L5 10" sub behind the passenger seat. You can easily get a smaller 10" or 12" behind the seat.

I fit two 8" fosgate subs without any problems. They hit pretty hard too.

Do you lose your arm rest? Meaning, does it have to stay in the 'UP' position?

I like the 8' set up

Nope, my drivers seat has full movement. It touches the box corner a little, but not enough to stop you from moving it back. I now have grills on the subs so the cones don't vibrate on the seat. The armrest comes very close to the speakers, but I've never had issues with it.

I have a different amp now and as long as I keep the amp behind the passenger seat, my driver's seat can recline against the wall.

what kind of music do you listen to?

another sub that you can consider is the Elemental Designs 7kV2 @ edesignaudio.com

it's a 6.5" small box sub (0.25-0.5 cu ft), so you can fit a wedge box behind your seat (towards the bottom), while the top of your seat reclines against the cab

the thing that works to your advantage is that you've got an '04...it has ghastly more space than the 89-92:

When I built my custom box I set my driver's seat back like I normally do and got behind the passenger's seat and took measurements. I wasn't able to keep the measurements exact because of the length of the sub, but I got it close enough the I didn't really notice a difference.

Just finished, two ID 8s with a pioneer amp and no leg room loss. Plenty of boom for the truck.
