I thought my amp said this.... 500 watts MAX x 2 chan. @ 4-Ohm Bridged

So why cant I have each sub hooked up to 2 channels? There for I would have 500watts per sub?
you would have 500w max at 100% efficiency per channel according to the manufacturer... yes.

also according to the manufacturer the amp puts out 250w RMS at 100% efficiency.

the sad reality is that the lower priced amps are much less efficient then a costly amp.
even expensive amps are not always 100% efficient.

reality is your going to be pushing like 200w RMS per chan if everything else is top notch leading to it.- at full volume.

might peak out at 400w MAX for a millisecond or two if it doesn't clip first. but you should almost never worry about an amps MAX power rating, it means very little. RMS isnt really too helpful either. it just gives you a ball park estimate of what the amp can do..

So the subs are rated at 100-250 RMS power. If I am pushing 200RMS per sub with my amp I am confident that everything is going to sound fine.

that should be good but as john said sealed boxes are least efficient so i overpower mine by about 50w
i have a sub rated for 450rms and im pushing 500rms to it and havent had any problems
