Being a 2000 I would probably buy master install kits (carrier and pinion bearings) or overhaul kits (all bearings and seals maybe) for the axles. If you digging in there and replacing stuff you might as well do it right.
You don't need a new carrier unless you want a new one, for a locker or something.
35s might "fit" on a 3" body lift depending on your definition of fit. If you actually plan to wheel it and get full use of the suspension they are going to rub, especially if you use 10" wide wheels.

but ya, i got 4.88's and 35's and it feels nice. Not as sluggish as 3.73's and 32's too...so its not that bad.

i run 35's with a body lift. and i wouldnt wheel it. only basic trails. but if it required the truck to flex it would rub bad.
33's are the way to go if you wanna wheel

I'm just buying 4.88 to throw on my 1999 with a 3.0 and 33's right now. Thats as deep as you can go with the ifs front too. Over at TRS is one of the better deals on gears, but Im pretty sure It can be beat. Front gears are $180.50 + $213.50 for the master rebuild kit. Back gears are $231.25 + $103.50 for the master rebuild kit. So like $730, but thats yukon so its the good stuff. Oh and to fit 35's you will have to max your t-bars. It will probably be tight, ride ruff and I'd imagine you will have excelerated wear in the front end.
