Is there a way to test and see if the OHC and temp thingy work before installing?

Hook the Power and ground wires to a 12v power source!

I bench tested mine before the install. I used a 12 volt jump box and some jumper wires. I insulated the jumper wires with some tape just to be safe. I even tested the sensor by heating it with a heat gun. Worked fine.
