Well basically I have noticed after having my headlights on for a bit of time that where the fan switches are and the A/C switch, that the plate gets very hot if touched. If I was to leave my fingers or hands there they start to burn.
Does anyone else have this? Should I be worried about it?

I have a 97 and therefore some things are probably a bit different between our trucks.
HOWEVER, I can tell you that my AC controls don't get hot and I would be GREATLY concerned if ANY part of my truck (other then the engine/exhaust) got hot enough to burn flesh from "normal" operation.
My first thought would be to check your bulbs behind the A/C controls. Perhaps they aren't the right ones? Does this only happen with the interior lights on?
