Test the ect sensor cold then hot and see if its ohms value matches the chart below. If it reads higher than it should, the ecm will think the engine is colder than what it is,leading to an overly rich fuel mixture & retarded timing. If its reading too low,the ecm will think the engine is running too hot, leading to a lean fuel mixture & overly advanced timing. The chart shown below lists the proper values you should match. The ait sensor should also be tested(using the same test method & chart below.Replace if its bad.

Check the fuel pressure regulator too.A defective regulator usually doesnt cause problems until after the engine has reached operating temp. After it warms up,remove the vacuum hose from the regulator & see if the hose has fuel/fuel odor inside of it & see if the regulator vacuum port has fuel seeping out of it.If yes to either, the regulator is bad.A bad regulator will either leak fuel internally or stick open/closed.If it sticks partially open, fuel pressure will be reduced enough to cause cutting out or stalling.
The pip sensor(inside the distributer)& ignition module will cause cutting out too.

I would check the egr valve too.Remove the vacuum hose from it,plug the hose then take the truck for a 10-15 minute test drive to see if the symptoms disappeared. If they do,the egr system needs to be trouble shooted.
