cant decide between street or mud terrains

cant decide between street or mud terrains
part of me wants to do slightly better off road .... while the other part of me knows i need to save money and just get some damn tires
so heres my dilemma ... the largest id want to go with m/ts are 235/75/15 .... my stock size is a 225/70/15.
I found some for just shy of 400 shipped brand new ... of course its some brand nobodys ever heard of, gt tires.
With the tire size calculator it says my speedo will be off by 5.4% ... im sure i could figure out how to calc my gas miles afterwords so my calcs are correct
my question is has anyone with a 2.5, 3.73's 5spd, stock size of 225/70/15 gone to this size, and did your gas mileage drop? Ive heard reports of people with the same motor / gears pulling 22 mpg hwy on a/t 31's, but thats all ive been able to search up.
Furthermore, if you have 2.5, 3.73's 5spd on mud terrains with open diff does it do any better off road or does it still get stuck in wet grass?
Anyhow, ill consider your responses and my monetary situation, but i def want to replace at least 2 of my tires before may 15 because im planning a decent size road trip and dont want to be riding balds for that.
If i decide to go with street tires have any of you gone to a 215/70/15? Cause i can get 4 of those mounted balanced for $220. And if i do stay with street tires a 2/3 drop that another member on here is selling will follow shortly thereafter. (was gonna buy it last week then broke **** on my mtn bike)
