could be number of different things. i will name everything that MAY be possible. thermostat could be in backwards or the wrong one or temp. if water pump was bad it would overheat all the time when engine is up to temp. could have an air bubble trapped somewhere. could be low on coolant after the t-stat opened and burped when you had the service done.

a bad fan clutch would likely overheat in the city when no air is going through radiator and the fan is needed. on the highway the fan really is not needed at all.

maybe some trash or debris blocking front of radiator/ac condenser blocking airflow.

maybe headgasket starting to leak...

How far does the gauge go up?

ford temp sensor are not the most accurate and can swing a bit is kinda normal.
