Still having heating issues

Still having heating issues

Looking for some help. Last December, I had to get a reman jasper engine put in, thought that was gonna be the last of my problems. Boy was I wrong. Recently I just swapped out the thermostat and drained all of the coolant out of my truck. Afterwards I filled it back up while making sure I took care of any air bubbles. Ran fine for a couple of days and had no temp issues. Was swapping out the transfer case motor today and noticed coolant just raining down, jumped up and checked under the hood to find it was coming out of the grey sensor in the thermostat. Being far from home, I knew I wasn't super low on coolant and the reserve tank is topped off, so I had to drive it home. On the drive home the gauge was in a constant fluctuation around the middle of the gauge.

Any thoughts on whats the issue?

Random temp fluctuations was from air in the system from the leak

What year Ranger?
What engine?

When you refill coolant in any engine pull off either heater hose at the firewall, that will let the air out of the engine and heads while filling

2003 4.0l 4x4
when I refilled the last time i just cycled the truck on and off 4 times, while I keep a funnel on with coolant overflowed on, and burped it from the top and bottom hoses. Engine ran idle for probably a total of 20mins and then ran it up and down the road for another 20mins or so. First couple of days had no issue and then after 2 days I did.

Would that indicate I have a leak and where/what's best to find the leak?
Could it mean there's already an issue with the jasper reman engine?

With seeing the coolant coming out of the original grey sensor in the new thermostat housing, could that mean the sensor is bad? Or that the new thermostat housing is no good?

Not sure if 2003 Ranger V6~4.0L~SOHC TStatHousing still had 2 TempSensors (Brown+Orange to Gauge + Gray to PCM) or just the single Gray one?
In any case, if leak is around GrayTempSensor (sends signal to PCM Computer), & is NOT a cracked JunkPlastic HousingSeam,
can try pulling out that TempSensor & wrapping its ORing with TeflonTape to make a tighter seal.
Then reinstall TempSensor; make sure its fully inserted+snug & mounting\retainer clip is tight.
Aftermarket TStatHousings sometimes have larger Sensor holes than they should.
