When I did mine I put a power window switch in the center console and used it. It was out of a mid 90s Chevy and matches the interior pretty well. I also have a master power switch that kills the system so it can't accidentally get bumped and spooled in or out.

Nice stuff from the 12 Volt Guy.
Makes it a lot easier but you can wire this type of panel yourself.
Jump the trigger wire for the main solenoid and the out and in solenoids run the wires inside and put some toggles on them. Use an Aircraft type safety switch with cover for the main power and some Flashing LEDs for indicators.
But if you have $50 go for it.

I'm thinking about putting it on the side of my center console. That way I don't have to cut a hole in the dash and it'll still be right there close.
Yeah, he can make all kinds of stuff with engraving too if you want it. There are alot of nice ones in his thread over on pirate.

I'm gonna try to relocate the solenoid under the hood to protect it from the elements and that way I can still use the corded remote outside if I need to. This way I'll have both, inside and outside.

The box under the hood is a good idea.
Instead of relocating the Plug leave it and add another; make a harness to extend the wiring or just add wires to the connections on the inside of the box and run the harness in the cab. This way you can use the box plug or the cab plug and it doesn’t take a lot more effort or materials.
