Limp Mode / Oil & Engine Lights - need some diagnostic direction

Hello! 2006 Ranger with semi-recent head gasket replacement has been driving like a dream... until I slowed to a (gentle) stop behind a braking car on the road yesterday and she went into limp mode upon letting go of the brake. It all happened quickly, but it seemed to be that :

- gas pedal wouldn't let her accelerate
- steering wheel locked up / slowed
- oil pressure & COL came on

Put on hazards, turned off car, rested a moment. Turned on the car, and no issues. Drove the approx 1/2 mile home and fine this morning. (Starter her just to move her into a spot to better work on.)

Plan is to change oil (oil level fine, looks clean, but about 500miles to time anyhow), and then - *need help here* - with no codes currently being thrown, no problems with oil temp, I think I should start with checking or replacing the sensor and / or pump - does that sound right? I can take to a shop, and also happy to keep working on her myself when I can.

Do folks know of some known issues with this, and - assuming I am now actively working on a diagnosis and using another car when I can - how comfortable should I feel driving her as long as no lights come on and she's making no noise / running fine / temps all look good?
