I'm adding power mirrors to my truck and noticed the switch has 8(?) wires. Can anybody help me on what wire does what?

What gauge wire should I go with, 16 or 18 ga?

I'd try to match it to the same size as the existing wires at the mirror head connector. However, for this application I would think either size would work just fine.
