I've use mine for a couple of movies I've made now.
It's a 1" pipe flange, bolted to the floor between the seats and just behind them. Then I mounted the top piece of a tripod to one end of a 3 foot or so long piece of 1" pipe, and the other end is threaded to go into the flange. Instant camera mount.
There's footage I shot from it here:

Use the links from blckout's site, not djayes -- his site doesn't work anymore. The one for "food" has no footage from the in truck camera.
One problem I have is that the tripod mount for my video camera is too weak. The camera can vibrate quite a bit on the tripod mount. I thought it was the mount intself, but stabilizing it only helped a little -- most of the problem is a weak tripod mount point on the rather larger super-VHS JVC camcorder I use.

I am anti screwing things to the floor, but a Buddy of mine has a neat camera set up, its base bolts to the seat bolts on the left and right side then a pole comes out the middle and extends up to eye level and then it has a base to hold the camera. This makes it appear as the viewer is the riding b**** in the car with you. I will see if he has pics of his setup.

Do you have an extended cab? I simply bungied a tripod w/ my camera mounted on it in the back of my ex-cab truck for a road-trip down to PA for a meet a couple years ago. I set my still-camera up to take a photo every 5 minutes and made a video out of the results. It worked great.. I'm sure video would work equally as well.
It's kind of pricy for a couple suction cups, a sheet of aluminum, and a 1/4-20 thread, but there's a product called stickypod out there. A couple weeks ago I saw guys at the autocross I went to w/ cameras suction cuped to the inside of their windsheilds. I've been toying w/ the idea of buying one or trying to build my own and sticking it to the outside of my car/truck to try some interesting photography while underway.

Yeah, the stickypod thing looks pretty sweet to me too. The thing is it is trivial to make if you already have good, sturdy suction cups. And they sell replacment/extra suction cups seperately too, unfortunately you have to be a 'current customer' and have already bought a stickypod to buy the cups individually. Monday morning I asked our mech guys if they knew of anyone that supplied industrial grade cups.. They couldn't come up w/ anything better than I had found on google already. I might buy their cheapest 'pod just so I can gain access to the cups.
I really want one for screwing w/ on the motorcycle!

You could use suction cups used for windshield replacements. I use a set from equalizer.com
