2002 ford ranger xlt temperature gauge issues

I'm originally from Florida and I'm not used to cold starting a vehicle. I'm up in Alabama for college and we've had a relatively cold winter. A couple of months ago I started noticing that my truck was kinda struggling to crank when I first started it up but only occasionally. Every once in a while it would take a little bit longer of me turning the key for it to turn over. Also I noticed that the temperature gauge was starting at the 9 o'clock position beneath the minimum temperature reading. After driving it for about 15 minutes, it would eventually rise to the minimum and eventually to the middle of cold and hot. I understand that the cold weather plays a role in that but on a couple of days that it was 60-70 degrees it was still happening. Now its 50-80 each day and it's still doing this. Also when I first noticed the issue, my truck felt sluggish and half asleep is that makes sense. I pulled over to see if anything was wrong under the hood but I didn't see anything wrong or out of place. Also if I crank it over and let it idle for 10 minutes or so nothing happens with the temp gauge. Has anyone else experienced this? Trying to figure out if I need to take it in to get looked out or if this is just like a seasonal thing because it was cold.

You've got a 2002 Ranger. V6~4.0L~SOHC Engine. 5r55e Transmission? RWD.
How many miles? How long since Coolant system has been serviced?
~ Replace ThermoStat
~ Replace FanClutch+Belt
~ Replace All CoolantHoses
~ Flush Radiator, BackWash RoadDebris from Core
~ Flush HeaterCore Foreward+Backward
~ Fresh 50/50 Coolant
Sounds like it needs it.

It has about 91000 miles on it. I'm not sure when the coolant system was last serviced.
