Going outside the recommended limitations

Going outside the recommended limitations
Have been in discussions with the guys at Doetsch about their lift kit packages.
Most of their kits are recommending a 15x8 rim, no bigger than a 32x11.5x15 tire.
What's the risk of going to a bigger rim, say a 15x10 with a 33x12.50x15 tire? Are they more concerned with rubbing?
From the looks of what I've seen, many have gone that way and went bigger and wider than that.
So what gives? Even if it's not Doetsch, what about other models. Why is there a "maximum" or "recommended" limit?
