31s on stock

Would 31×10.5x15 fit nice on my 2005 ford ranger edge with no rubs or anything

An edge should have torsion bars. So yes if it has torsion bars, they will fit just fine

Edge sits at 4wd height, wether 2wd or 4wd.

I wasn't sure the 2WD Edge sits at the height of the 4WD. Good to know.
