Intermitent engine failure

I have a 1999 3.0 2WD automatic ranger, this thing has to be the most haunted truck ever to come off the rod production line.

before getting into whats happening, heres the backstory:

I had originally blown the head gasket at 170k(roughly) I put new head gaskets and every other gasket that needs to be taken off to get to the heads, put it back together and heard the worst lifter knock you could imagine, take it back apart right away and put all new lifters and push rods in and rebuilt. After that it ran rough, but the gas was sitting for a year and a half and 1/3 cats was GONE while the other 2 were mildly clogged and I needed new plugs. I handle the plugs and wires and I drive it for 2 days and 50 miles before it cuts off out of nowhere at highway speed, decelerating on an exit at roughly 50 mph, no matter what I did on the side of the road it couldnt kick the motor over and run. It started the next day after getting towed back to my house with no problems but I did little to no troubleshooting and quickly shut it off. I then replace the fuel pump and filter to rule out fuel and drive it a quarter mile after running it in park at idle for an hour with no problems and it cuts off on me. I go to working on an air solution and replace Idle Air Control Valve and mass air flow sensor as well as PCV. It did the exact same thing after that, we then knew it had everything it needed to be able to run (spark fuel and air). I will drive and itll be fine and then randomly die out like its choking. I then replaced cam and crank position sensors and exhaust and I was able to get up to 70 mph before taking it in for the night. the next night my mother drove it 4 miles and it cut off on her the exact same way.

I know it is also not the battery itself because the battery gives power to everything in the truck and always starts it. Another symptom is that ill turn the key and itll stutter for a second before kicking over and then itll instantly sound normal. It tends to cut off when the motor is stressed, normally only in gear. If anyone has wisdom to offer, please enlighten me. My next steps are to replace the cam and crank shaft while i do the rear main seal this summer, but if I do not have to do that work I dont want to.
