Overheating on cool weather only

2.3L single Cab, Standard Transmission.

My ranger overheated once, and busted the radiator, so I had the water pump, radiator, thermostat, fan clutch replaced with new parts about two years ago. And then, I noticed this strange thing... I would no longer overheat... except... on cool days.

It doesn't get to an extreme point, but last winter it really scared me a few times as when I got off the freeway after a good 15-20 minute drive, the heat gauge would go close to the hot-limit.
At that time, I noticed it was worse in the early mornings, and especially on cooler days.

I live in Arizona, so we have a long summer, and the truck has been perfect, no heating up ... but this morning the temperature dropped a little and I noticed it went on the hot side again...

Other than the Fan Clutch, everything else I replaced myself, with original parts.. the clutch was done by a mechanic... Could it be a wrong fan clutch? from my understanding, that could be affected by weather (as in spins better in hotter climates)... if not... can anyone help me figure this out?

coolant temperature sender / sensor replace it
