Ive put 3000 miles on it since I got it back on the road. Its using a quart per 500 mi. One of a few problems. However the truck is solid and supposedly has 54,000 mi on it
Agreed . The valve seals have most likely dried out and are letting it suck oil past the guides. A few rings are probably stuck as well.
But don't overlook the simple. Check / replace the PCV valve. It is cheap , easy to replace , and can also cause excessive oil consumption.

put a quart of marvels mystery oil in and run it for a while to free up the rings, valve seals could be cracked but the plugs should show where the problem cylinders are as they will clog with carbon from the oil. i would think stuck rings would be most likely cause.
