First of all: go pull your engine dipstick RIGHT NOW and make sure that the oil level is correct. If it is wrong, don't drive it until you correct the problem.
If the oil level is OK, then it could be something unrelated to the oil change. The shaking and the jumpy oil pressure gauge are often signs that your idle is too low (roughly 300~400 RPM). At such a low RPM, oil pressure may drop low enough to go below the threshold of the oil pressure sending switch, causing the gauge to drop to zero. With the engine stumbling along at an erratic low idle, it may make the OP gauge jump back and forth between zero and midscale.
Idle speed is controlled by the Idle Air Controller and they sometimes stick. Try a search on "IAC" for more threads about this.
