I am not an audiophile but to me Pioneer is a good unit and buy a small amp to drive the sub; maybe even a 5-output amp to drive all of your speakers and the sub too.
Some will say not to use rear speakers, just the sub but I like the sound of the rear filling in some of the mids and highs.

I have fallen way behind in the technology scene since I was young. I just use the radio, maybe a cd every so often. I have a hard enough time driving just 4 over the speed limit without constantly adjusting or looking.
I just want something with a lot of output, power and volume, and not junk. Models would be good too, not just brand names.

Everything depends on how much you want to spend.
Pioneer AVIC140 is a good unit; has everything mentioned by 99offroadrngr plus.
Only problem is the price $1000+.
Speakers, get some component unit for the front, 6.5 mids with separate tweeters, get a good amp and a bass unit; size of the bass depends on $$$ and how much bass you want and size of the amp depends on speakers and how much volume you want.
Again, I find the rear 6x8s add something but audiophiles will disagree.
Pioneer has a great selection tool on their site and it will help to get a good balanced system.

I don't have time for research. 2 jobs with 80-100 hours a week in 5 days on one job only. I just want some beats. Already have a solo baric 10" L5 rated at 450 RMS in a truck box. The KX600.1 went out on me. I tried to get a ZX750.1 with Bill me Later, but it wouldn't go through. I just want some bass, that's all.

Looking at the Kenwood Excelon KDC-X996. Don't need all the features, but want the sound quality.
Thoughts? Suggestions?

RCA outputs with a strong signal voltage are ideal for adding external amplifiers.
external amplifiers are the key to maximizing the sound quality from your speakers.
clarion, pioneer, kenwood, alpine all have units that offer these features built in to the headunit.. but not all units will have them. so look for those features specifically.
