You have 15" wheels(rims) so 16" tire won't fit, you would have to buy 16" wheels as well

Plug in the numbers for 225/70/15 and 255/70/15
And it will show you the differences, 2" taller so speedometer will be off
I doubt it would rub since other Rangers of that year used 29" tires
They are 1" wider so MPG goes down, not much but down it will go
Thinner tires have less friction on the road, so better MPG, but also less traction because of that, so its up to driver/owner as to what is more important.

Sorry I missed the "RIMS and tires" part
255/70/16 would be 30" tall, 3" taller than current tires, so might rub
You need 1.5" clearance over current tires, rear won't matter, the front is the concern
So turn front wheels until they are at closest point to fender and measure, see if you have that 1.5" clearance, check front and back of the tire, then turn steering wheel all the way in one direction and measure frame clearance, do it in both directions front and back of tire at closest point
