erratic temperature gauge

I have a 2011 2.5 ranger, the temperature gauge rises from normal to just below the red, but when i pull over it quickly goes back to normal, if you put your hand on the top radiator hose its the normal temp to me,
The pipe from the heater matrix to the thermostat housing is hot but the thermostat housing is cold ?? i have changed the thermostat and radiator.
I have checked the engine temp with a handheld thermometer which read 79 c degrees which should mean the thermostat is still shut,
Will it be the coolant heat sensor needs changing?
If so where on the engine is it ??
Thanks in advance

Welcome to the North American Ranger forum

You have a different Ranger than the ones we had 1983 to 2011
You have a T6 Ranger, larger than ours and different engines, we didn't have a 2.5l in 2011

T6 Forum here: https://www.4x4community.co.za/forum...Ford-amp-Mazda

In 2011 you probably have an HEC dash board so there is no direct connection between temp gauge and the engine, the engine computer(PCM) uses the CHT(cylinder heat temp) sensor to get engine temp and then sends data to the temp gauge on the dash
