Anything special about getting the **** off? I tried pulling and it didn't come as easily as the HVAC controls did or I'd expected it would. Do I just need some more oomph?

there are either 2 or 3 phillips screws on the back of the switch....just pull the plugs off the switch, remove the screws and you're all set

I want to know if I can use a 4x4 switch to run like, and on/off/other switch. It has 3 positions, so why not, right?

Remove the bezel, pull the "****" off, unplug the clip on the back side using a screwdriver or xactoknifes(basically, it's a REAL PAIN IN THE A## to remove the clip) on the back side, 2 phillips screws need removed, then pull out the switch on the back side. You do it once, you know how forever....it's like ridin a bike. Good luck Kyle.
