You can run two gauges off the one coolant temp sender, 1 wire is a sender
You will also see a 2 wire Sensor, that is for the computer, do NOT touch that one.

For the oil pressure, you will pull off the Ford oil pressure "switch", go to the parts store and get a "T" that will fit into the hole the switch came out of and that will fit the switch.
Then a fitting on the "T" that will allow installation of a PS60(oil pressure sender) or similar for the real gauge, these senders are larger than the switch.

Engine oil temp will be an issue, you need to drop the oil pan, drill a hole in the side and mount a temp sensor that will be below oil level in the pan, they make kits for these with good gaskets so hopefully no leaks.

I have read of people making a custom drain plug with temp sensor inside, just make sure the wire is a quick disconnect type, lol.

They also make dip sticks with temp sensors, but they do get quite expensive.
