Yes, as long as you are not driving at 70MPH, lol
Many do "down shift" when going down a hill to use the engine as a brake so they don't have to "ride the brake pedal" and heat up/wear down brake pads

What engine?
2.3l, 3.0l, or 4.0l
An engine has a best Torque RPM, torque is what gets quick acceleration, Horse Power is what holds you at a speed
2.3l Duratec makes best torque at 3,750rpm
3.0l is at 3,900rpm
4.0l is at 3,000rpm
Usually the computer(PCM) for an automatic has shift points setup for the specific engines torque pattern, but sometime not, lol
So yes you may be able to hold trans in 2nd gear longer to get a little better acceleration before shifting to 3rd
