I have a 2006 4X4 ford ranger that was my dad's ranch truck. It hardly gets above 40 mph on our place. I have the catalyst converter get stop up so took them off and beat the stuff in them out of them. I couldn't believe it had three on it. I hear puting non fouler on the 02 sensors would take care them and help the truck run better. But now I ran a code test on it and got back two codes. One says 02 sensor signal stuck Lean bank 2 sensor 2 and the other 02 sensor signal stuck Lean bank 2 sensor 1. I also get a code engine coolant temperature circuit low input. I replaced this housing that has the sensors in it about a month ago. The truck runs fine until it gets about 3000 rpms. I gutted the converters because they get so hot and always worried about catching the pasture on fire. I was reading all three of these codes could cause the truck to run like it is. I cleaned the O2 sensors but didn't know how you test them to see if they are ok or not. Any help will sure be helpful.

Welcome to the forum

First the Temp code ETC sensor
It usually means the thermostat is not staying closed all the way so engine is not warming up to operating temp fast enough, or at all
Temp gauge on dash should show just below 1/2 way after 10min drive from Cold Start
If its at 1/3 or so you will have that code, thermostat to use is 190-195deg model on this engine

The O2 sensor code for bank 2 sensor 2 means No Cats, also Bank 1 sensor 2 same thing, but this would also mean Dual exhaust system, and you said 3 Cats which would be single exhaust system???
Single exhaust will just have bank 1 sensor 2 after Cats
Only Dual exhaust would have bank 2 sensor 2, and 4 Cats, 2 on each separate pipe

O2 "sensor 2s" are the O2s after the Cats on any vehicle, they test if Cats are still working, so with gutted Cats you will always have that code

O2 "sensor 1s" are the ones closer to the engine, one on each "bank", they effect engine operation the most

All O2 sensors use a chemical reaction to detect Oxygen in the exhaust, and they run out of chemicals, it gets used up, 150k miles or 12 years and they are done, replace them

Sorry it's been a while since I post this. Had a tree fall on me and broken my pelvis bone and was out of commission for a while. Doctor approved me to get back to work so back to this truck. I finally got it running somewhat but now have the coolant temperature sensor (P0117) code. It's hard to get it started and from what I read this has something to do with. I replaced the thermostat housing no to long ago with new sensors in it. I got it from rockauto.com and kinda wonder if the sensor is good or not. I was going to put the old ones in the new housing but the was threaded and new one snaps in with a clip. The truck doesn't have but 62,000 miles on it. I use it most around my ranch. So it doesn't normally get above 30-40 mph. I feel that's why the catalyst converter may have stopped up. Suckers got hotter than hell and was worried about it catching my hay field on fire. That's why I just gutted them out. One guy told me that it wouldn't run right because it needed the back pressure for it to run right. I haven't found anything online that says you can't gut them. The upstream sensors I have non foulers on them. Buddy of my said that would work on fooling the pcm that everything is ok. Boy I sure miss the older trucks without all this computer BS.
