Possible running TOO COLD ?????

Is this possible in the Florida HEAT ???
6 months ago i replaced my water pump and radiator cause i was bored.
For years i have been running a flexlite Direct fan without a fan clutch, but my ac has been raising 10-20 degrees at a stop light.
My truck has never ran hot until last week,it was a bad thermostat.
Since then my truck runs IMO ( TOO COLD )
My ac issue still exsisted,so today i went to ford and replaced the flexlite Direct fan with the OEM fanblade and Therma fan clutch.
Ac is GREAT !!!! only raises maybe 5 degress, but truck is still running TOO COLD
I just dont want it to start eating gas and have the motor carbon up.
Does this gauge look right to anyone ??

does it always run at that exact temp once its warmed up. When I had my new thermostat put in a year and a half ago, a year or so later it got stuck open. All it took was for me to pull it out and get it to release and rechecked it to make sure it wasnt gunna stick again and its worked fine ever since. But my temp would never stay the same, would always be low but i could see it move

It does show movement, but very little.
When the motor is cold,i see it warm up,then it goes to the lower side of the gauge.
I guess i am just going to have to live with it ( LMAO )

Try this:

See if the needle raises when you put the selector switch to OFF or MAX A/C

What thermostat did you put in ? a 180 deg ? Ford tried to give me a 165 on accident when I was there for the housing replacement. Whats your mpg average ? is it different from before ?
