As stated above, the oil pressure guage is not accurate, the sender is the same as one for an idiot light and the guage will read in the middle of its scale with any pressure at all....3-4 psi is enough to trip the sender. If you wish to reassure yourself regarding oil pressure, hook up a mechanical guage.
Having stated the above, what you are observing is not a lack of pressure, but simply the fact that a few lifters lose their prime while the truck is parked, and after a few seconds they fill with oil and things return to normal, nothing to worry about.
