If you gained 1 HP from the colder air, will it offset the 5 hp the a/c is using to spin it? I'm pretty sure the a/c kicks off at WOT, but still.
One other point. Line up at a 1/4 mile track with the a/c on and they will kick you out of line. They don't want the condensor water on the track.

the principle of cold air is valid.
I see bags of ice sitting on aluminum intakes between runs at the track.
Cooling the fuel line is an option also. Think about 40 degree fuel being sprayed in a fine mist, Its gonna cool the surrounding air. My thoughts in the past was to divert the purge spray of nitrous through a mini radiator for the fuel. It could be done with c02 cartridges also. All it would take is a small heat exchanger- a small copper pipe wrapped tightly around the fuel line several times. Pump a/c air, nitrous, or co2 through it. Add water and it would last a while. Run the a/c line through a larger pipe full of water. Wrap the copper cooling tube around the pipe. Heck, at that point you could just fill the pipe with ice water and let it do the work. I'm pretty sure Summit sells an ice/water fuel chiller bucket.

i almost did a snorkel from the a/c to keep water out of the engine. the problem i've heard from a neigherbor that did it, is that its REALLY LOUD inside your cab! it'd be a problem if it's your everyday driver. check out this link.
