Could be Choke mode is not being set, 2.3l Duratec uses a CHT(cylinder head temp) sensor to determine engine temp to set the amount of Choke to used on cold engine
CHT sensors were not really an issue but were known to fail, its between spark plugs 3 and 4 on top of valve cover
If you have an OBD2 reader you could check what temp the computer is seeing with key on, engine off and cold, if its not outside temp then thats the problem

2001 to 2003 2.3l Duratec also has IMRC which can cause engine stumbling, but warm or cold not specifically cold

ok makes sense since I do believe mi wiring needs a better connection there kinda chewed I have replaced the temp sensor but my temp gauge does not read I’ll look and see if I can cut and re connect. Yes it is only cold if I try to run it cold it’s bogges down I have to let off the gas. But not the case if It’s warmed up. I can go to the store turn off come back and go but if I turn it off for say an hour it will want to bog out but once warn it’s all good

The Temp sender on the metal hose behind the head is just for the temp gauge on the dash, no connection to setting the Choke on cold start, just FYI
This temp sender should have 2 wires
A red/white and black/white wire, if you jumper these two wires together and turn on the key, the temp gauge should go to HOT, all the way up, if it does then the wires are OK, if not then a wire is bad

The black wire is a Ground, so battery positive to this wire should show 12volts, no volts is bad wire, but just a ground so easily fixed
Red wire runs to the gauge, battery negative to this wire(key ON), should show some voltage, can be up to 12v, no volts means wire is bad
