I don’t know if anyone else has this issue but sometimes when I’m driving my truck and it shifts up it will try and shift up 2 gears really quick and then shift it self in to neutral anyone have any idea what it is

There is no Neutral in Drive, so that's a bigger issue, change fluid and filter if you haven't, check fluid for metal bits, should not be ANY
You have a 5R55E automatic, these have a faux 2nd gear, i.e. 2nd gear is 1st gear with OverDrive on, so there is no actual 2nd gear
If accelerating slowly you should feel the 2nd gear shift(OD on) and then the shift to 3rd
If accelerating more quickly the computer may shift from 1st directly to 3rd no OD on, so no 2nd gear, so "skips a gear"
Computers choice
OD on/off button does NOT effect this in any way
How many miles on the transmission?
They generally last to 250k-300k before they need a rebuild

Changed fluid
I already change the fluid and the filter I doesn’t do it often it does it sometimes I am very confused on what it could be there a transmission place in my town I was thinking about taking it to if it keeps happening
I wouldn’t say it would shift in to neutral I think a better description is that it just doesn’t shift in to a gear it’s almost like it misses a gear and when you let off the throttle and let the rpms drop it will harshly shift in to gear
First thing I'd try is HandPump ~1qt of old ATF from Transmission DipStickTube, replace with LucasTransmissionFix;
LTF is basicly high viscocity ATF, helps maintain fluid pressure & thus shifting in worn transmissions.
If that does NOT help, then full Tranny service: PanDrop + New Filter + New Gasket + New MerconV + Band Adjustment; should be done every 33kMiles\4Years.
Use a premium FullSyn MerconV ATF like Redline or AmsOil.
If that does NOT help, next option is a new\rebuilt ValveBody with a ShiftKit & new Solenoids + BondedGasket;
"Central Valve Body" is a good source\vendor for these.
If that does NOT help, next option is a new\rebuilt Tranny.

Replaced red inlet\suction tubing (nearest handle) with ~4ft clear vinyl tubing to reach thru DipTube to TrannyPan & allow visual of flow.
Make sure pump & tubing are clean before inserting it into DipTube.
A clean small=32oz=1qt CoffeeCan works as a measuring cup. Need a NarrowTipFunnel to refill with new LTF or MerconV ATF.
I do this every 6mths to refresh Tranny with a quart of new MerconV, along with routine Engine Oil+Filter change.
