‘98 3.0l v6 Rough idle and gauges moving

Hello, long time lurker here, first posting.

Absolutely love the forum, has helped me greatly with my truck but now I’m having an issue I am having trouble diagnosing.

So, my truck will begin to run rough during idle, whether at a drive thru or carpool line and the gauges will move. Truck shakes a lot and feels like it will die, but then revs up and goes back to normal either right away or within a few minutes once back to driving.

Only does this when idle.
Whether ac is on or off.
Oil gauge goes crazy and battery gauge will dip during this.

Anyone have any ideas or places to start?

Recently changed oil, filter, and a new oil pressure sensor as I thought that was it, but it’s still doing it.

Video attached to get an idea.

Thanks for any help.

edit: now the battery gauge is also dipping and truck shaking when ac is turned on…

Okay, so the oil gauge rarely jumps around now, may if engine starts to idle rough and sputter.

But I've found that I still get the occasional rough idle.

I scanned for codes, had lean codes stored for both banks. Went and monitored a full tank of gas and only got 160 miles on a full tank. Now, it's been hot and super humid so I've had the ac on, but no way i should be going through that much gas so fast.

it's a 1998 3.0l v6, automatic trans, XLT model, 98,600 miles.

Here is everything that I've changed within the last two years.
Air filter
Air Intake (original had a crack)
Fuel Pump
Fuel Filter
Fuel injectors
Coil pack, spark plugs and wires
Battery (less then year old)
Alternator (old one burnt up internally and melted, it was crazy)
Brakes
Oil pressure sensor
Oil filter
Oil and all fluids (changed regularly and toped off regularly if needed)

Quick inspection this morning and I found the PCV valve completely disconnected. Reconnected it, found no visible damage (cracks, etc.)

Unplugged the idle control while running to check to see if RPMs dip and engine stalls, etc., someone recommended it in another thread to check for vacuum leaks, and it instantly started to sputter, drop and then engine died. Reconnected and did a second test few minutes later and it did nothing, barely a dip in RPM.

Read in another thread to maybe change the o2 upstream sensors. Would that help? Should that be my next step?

Thanks for any feedback, this one is stumping me.
