The last bolt I need to take off to remove the water pump is blocked by part of the engine block or something, I'm not a mechanic (obviously) . I watched quite a few videos and none of them ran into this problem. Suggestions?

^ On my 2003 3.0 auto with AC I am with you. I have removed the 3 bolts that hold what I think is the AC bracket that also holds the idler pulley and nothing will budge. It appears that if that moves out of the way I can get the last bolt out. I am interested too please.
