Model: 2004 Mazda B3000 DS 3.0L

I'm shopping for new cylinder heads and see they have 7mm or 8mm sizes.

I'm not sure what those measurements mean, valve movement?

No, its valve stem size, doesn't matter for operation, its not valve size, just the stem size was changed, in mid-1999
1986-1999 has 8mm valve stems
1999-2008 had 7mm valve stems <<<<< so this is what your 2004 has

But the heads themselves are interchangeable, 1986 3.0l Vulcan head set would work fine on your 2004 engine
